There’s nothing I love more in winter than a hearty and warm mutton stew weather served with rice or any starch of your choice
Ingredients (serves 4 People)
• 2 kg of Mutton
• Olive oil
• 2 teaspoons of crushed garlic
• 2 teaspoons of grated ginger
• 1 teaspoon of salt
• 2 teaspoons of black pepper
• 1 teaspoon crushed red pepper/red chili flakes
• 1 tablespoon of turmeric
• 1 diced onion
• 2 bay leaves
• 5 spoons of Worchester sauce
• 1 cube of Mutton stock
• 2 spoons of apricot jam
• Half a tin of canned tomatoes
• 2 cups of water
In a stew pot sauté the onion with the a good amount of olive oil,2 minutes later add the garlic and a minute later add the ginger and turmeric.
Add salt and pepper to the mixture in the stew pot then add the mutton, stir until brown, then pour in the Worchester sauce and stir in for a good 30 seconds. Following that, add the canned tomatoes and toss in the red pepper or red chili flakes ,2 minutes later adding your water and jam.
(NB: Drain the fat that collects at the bottom of the pot or use a large shallow spoon to skim the fat from the surface of the cooking liquid every now and then)
After a good 5-7 minutes add the mutton stock and bay leaves and bring the entire mixture to a slow boil, then reduce heat to medium low. Simmer on medium low heat for two hours.
Enjoy away!… you can without doubt adjust the stew to your liking by adding veggies like carrots and potatoes
